Japanese Wagyu is a truly exceptional ingredient, utilized in its entirety with no waste. Thanks to direct sourcing from Japan, we are able to offer a wide variety of cuts, each with its own unique character and rich flavor.
While we usually highlight the authentic tradition of “yakiniku” (Japanese BBQ), for this special evening we have prepared an exclusive Christmas course. In addition to our signature grilling techniques, our chefs have created an inventive selection of dishes inspired by Japan’s culinary heritage, including fermentation techniques such as koji (fermented rice), nuka (rice bran), and the deep umami of dashi (Japanese broth). These elements are elevated with France’s vibrant seasonal vegetables and premium ingredients such as caviar and truffle, carefully selected to deliver a unique fusion of Japanese and French culinary artistry directly at your table.
